Sprouted chickpea hummus

The ingredients.

Sprouted chickpea hummus recipe

  • 250g chickpeas for sprouting
  • 2 tablespoons sesame seeds
  • 3 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • 1 teaspoon of salt
  • 2 to 3 cloves of garlic
  • Some harissa


Sprout your chickpeas.

Before begining the cooking preparation, sprout your chickpea seeds about 3 days before, in a glass jar sprouter or a tray sprouter (Discover the sprouting methods and advice here).


The method.

  1. Softly mill the sesame seeds.
  2. Mix them with the sprouted chickpeas, the olive oil and the fresh lemon juice into a blender, then blitz until smooth.
  3. Taste and season the preparation according to your taste with sea salt, garlic, pepper and harissa.
  4. If necessary, add some water and mix again to get a smoother puree.

Decorate your hummus with some pine nuts, chickpeas or alfalfa sprouts, or with coriander leaves.
